GAMBAS AL AJILLO / Garlic Shrimp
8 raw shrimp peeled and deveined
2 oz. Extra Virgin Olive Oil
Pinch chili flakes
2 cloves garlic minced
Pinch fresh parsley finely chopped
1 teaspoon of salt
1 tablespoon lemon juice
The recipe works best if you use a “cazuela” to prepare in (these range in size but are small earthen ware bowls that can be placed right onto a heat source and then used to serve the dish).
If not, use a small pot or sauté pan to cook and then transfer to a plate or bowl.
Pour the oil into cazuela.
Add chili flakes and garlic.
Place on stove over high heat until boiling.
In the meantime, generously season shrimp with salt.
Once the oil has come to a boil, add shrimp and cook for 30 seconds. Flip shrimp and cook on the other side for 30 seconds.
Add lemon juice and parsley.
Yield: 2 servings
